You Can Have “Eggs” On A Plant-Based Diet!
Let’s Meet Our Plant-Based Chef Of The Day…
Shannon’s journey toward animal liberation really got going on Thanksgiving Day, 1996, when she was just 9 years old. After she saw footage showing what happens to animals in order for them to end up on our plates, she never ate another animal again and immediately became an activist, stickering packages and holding demos outside of supermarkets.
After about 2 decades of eating a ‘vegetarian diet,’ Shannon was made aware of the atrocities occurring in the dairy industry — she had never heard this information before. She also watched Cowspiracy on Netflix and then made the decision to transition to a vegan lifestyle overnight. Shortly after, she found out how horrendous the egg industry is, another one she had been supporting during all that time as a vegetarian.
Shannon now understood why those “crazy vegans” weren’t eating cheese or eggs — they weren’t so crazy after all. She got right back into activism — this time with more knowledge, more reasons, and an incredible amount of inspiration from her son, VeganEvan (who decided to go vegan the same day, even though she tried talking him out of it)! Shannon is fighting for the animals and for Evan’s future. She quit her “normal” job in 2017 to advocate, educate, and activate full-time. Shannon, her partner Wess, and son VeganEvan travel all over doing outreach & actions for the animals.
Shannon is one of the Creators of AAM — the Animal Activism Mentorship Program, the #DoneWithDairy Campaign, and #SignsForChange. She and her son are Ambassadors for Million Dollar Vegan, and are currently working on an initiative titled “Taking Pandemics Off the Menu.” Shannon is also the Director of Parenting & Activism for APlantBasedDiet.org, a Certified Vegan Lifestyle Coach & Educator, and a board member of Another Chance Ranch Animal Sanctuary.
Wow, what an amazing woman, and family. We just love Shannon, Wess, and VeganEvan, and all they are doing to change the world and help it become a more compassionate and sustainable home for everyone, including all species.
A Plant-Based Diet Does Not Mean You Don’t Get The Foods You Love!
Many people fear if they choose a plant-based diet they will feel deprived, unable to eat the foods they love. This couldn’t be further from the truth! Eating vegan has never been easier, and all your favorite foods like eggs, cheese, and even meats, now come in plant-based alternatives that taste just as good, if not better. Just Egg is one great example of how easy it is to have your favorite foods, like an omelet, while sticking to a healthier vegan diet. I love having a “bacon” and “egg” breakfast burrito in the morning, filled with “cheese”…all vegan ingredients…totally delicious! I have zero feelings of deprivation or missing out on specific foods. Plus, the vegan cheeses that are now available are unbelievably delicious. Daiya Foods, Violife, and Miyokos Creamery are just a few plant-based companies that make incredible vegan cheeses. So relax! Choosing a plant-based diet won’t leave you feeling left out!
Okay, let’s get back to the delicious vegan food made for us today by Shannon and Wess. Their vegan fried rice made with Just Egg, and their baked tofu turned out great! I can’t wait to try these recipes myself at home. I love fried rice! And I love tofu! So I am in luck with these dishes. The recipe is posted below, so I hope you will give it a try too!
Baked Tofu (Tastes like fried)
- 2 blocks tofu Extra Firm 0r Super Firm
- For each block of Tofu use:
- 1 TBSP Sesame Oil
- 1 TBSP Soy Sauce or Tamari
- 1/4 tsp Garlic Powder
- 1 TBSP Cornstarch or Arrowroot Powder
- Press water out of tofu if necessary. Cut tofu into cubes. Mix soy sauce, oil, and garlic powder in a medium sized mixing bowl. Gently toss tofu cubes until coated. Sprinkle cornstarch or arrowroot powder and gently toss again until evenly mixed. Try to keep tofu cubes intact during this mixing process. Spread cubes out on an ungreased, nonstick cookie sheet. Make sure none are touching and bake at 400 degrees until browned and crisp. Flip halfway through if desired.
Vegan Fried Rice Made With Just Egg
- Seasoning Mix
- 3-6 TBSP Soy Sauce
- 1-2 TBSP Sugar
- 2 tsp salt
- 2-3 tsp garlic powder
- 2 TBSP Plant Butter
- 1/2 bottle JUST Egg
- 3-5 cups cooked rice we used Jasmine
- 1/2 package frozen peas & diced carrots
- cooked broccoli
- cooked mushrooms
- and other veggies you want to add
- MAKE SURE TO USE A GOOD NONSTICK PAN!!!
- Add the butter to the hot pan. Once melted, pour in the JUST egg. As it is cooking, chop it up with a silicone spatula. Add frozen peas and carrots. Let cook for about 2-3 minutes, then add rice. Stir while cooking for another 2-3 minutes. Add Seasoning and Soy Mixture and mix-in. Add Tofu and Veggies. Serve & ENJOY!
- Really yummy as is or with sweet Thai chili sauce, vegan general tso sauce, teriyaki, etc..
