And it is so dang easy, anyone can do it, including me! LOL. Spaghetti Squash is a great healthy alternative to traditional pasta. Dress it up with a sauce and some spices and you are good to go. Thanks to our lovely viewer Laura Woodmansee Rose, this dish is called "Oh My Gosh, Squash!" Thank you Laura for helping me name it! 🙂 that was so much fun! In this Lunchbreak Live I used a simply, clean-cooked (no oil or salt) spaghetti squash. I just cut it in half and scooped the seeds out. I placed it cut-side down on a cookie sheet and baked for 33 minutes on 350. I wanted it to be quite firm yet so it scooped out in spaghetti-like strands. To top it I made a yummy, super chunky pasta sauce using 2 cans of italian stule chunk and diced tomatoes and a can of tomato paste. I added some #mrsdash and some italian spices, onion, and a ton of mushrooms. Then, I made a simple cashew parmesean that, to be honest, I didn't think I liked but now (after trying again) I really do like it! Cashew parmesean was 2/3c. cashews, 1/3c nutritional yeast, and a teaspoon of onion powder and garlic powder. blend but not too much because it gets pasty FAST! You want it to be quite firm yet soft enough that it scoops out in spaghetti-like strands.
To top it Tonia made a yummy, super chunky pasta sauce using 2 cans of Italian-style chunk and diced tomatoes and a can of tomato paste. She added some Mrs dash and some Italian spices, onion, and a ton of mushrooms.
