Mario Fabbri is an incredible human.  And damn can he make a mean Mac and Cheese!

Growing up in Chicago Mario worked for his dad’s Italian Sausage factory.  This Italian tradition is an important part of his family so he never thought he would quit the family meat business to start a vegan cooking show.  But he did!

At 20 years old Mario started a production company filming cooking commercials for television. He was filming a lot of unhealthy recipes that were very meat-centric. He became interested in vegan food when his business partner lost 100 pounds by eating vegan. After that Mario started learning a ton about food nutrition and he realized that there are no cooking shows for vegan food that he could relate to. Mario felt horrible about the work he was doing with meat-based companies so he decided to create his own successful show. That’s what inspired Trying Vegan With Mario. It’s a cooking show where Mario is on a mission to learn how to cook from the most incredible plant-based experts. The viewers learn about vegan cooking, new recipes and benefits through Mario’s personal experience and learning process. In addition, Mario also stars in the new plant-based cooking show New Day New Chef streaming on Amazon Prime, produced by JaneUnchainednews News Network and Inspired Media.

Mario’s amazing Ooey Gooey Mac N Cheese!

Body Builder Cheese Sauce

Ingredients
  

  • 1 white potato
  • 1 carrot
  • ¼ c coconut milk
  • 10 jalapenos
  • 3 tbsp jalapeno brine
  • Optional for protein: 2 tbsp hemp protein
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 3 tbsp Nutritional Yeast
  • 2 tsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt

Instructions
 

  • Boil potatoes.
  • Cut the potato and carrot into cubes. Boil for 7 minutes (until they are just soft enough to put a fork into them).
  • Blend cheese.
  • Add the potatoes, carrots and all of the other nacho sauce ingredients into a blender and blend.
