Ever heard of a pasta burrito? Neither have I, until now. This is such a unique vegan recipe, and it’s super tasty as well. Meira Geyser, Animal Liberation Activist, College Student, and Singer/Songwriter makes her original delicious plant-based pasta burrito!
Meira Geyser is an activist who is focusing on system change and getting everyone active. She is an organizer for DXE LA and has co-founded an online organization to encourage others to get active and speak up for animals. She is an incredible advocate for the animals, the planet, and the people. Her fight for animal rights is fulltime and she is all about getting others to use their voice for the voiceless. - 1 can of Pinto beans
- 1 can of fire-roasted tomatoes
- Collard greens multiple handfuls chopped up
- 4 cloves of garlic minced
- Manicotti noodles
- Add beans, tomatoes, collard greens, garlic, rice, water, and spices all together until the water is absorbed to make a stew.
- Cook noodles separately
- Stuff the noodles with stew and bake in the oven at 350 degrees until at desired crispness.
