Over medium high heat saute in tiny bit of olive oil, diced red onion, carrots, then add in broccoli florets, chopped mushrooms. Stir, cover and let steam for a minute. Uncover and crumble in one container of firm (not extra firm) tofu and chopped kale. Season with Simply Asia mixed seasonings or whatever seasoning mix you like, a few splashes of Braggs Amino Acids (or soy sauce), minced garlic, 1/2 tsp of turmeric, and several Tbsp nutritional yeast. Stir well, cover, turn down heat to low. Let sit for a few quick minute while you make some toast or bagel with Miyoko’s butter. Enjoy! Optional: sprinkle some shredded Daiya cheddar cheese to melt in.
