2 of Sophie’s Recipes:

Turmeric Spice Overnight Oats

Make 3 ahead of time for the week

1.5 cups old-fashioned oats

3 tbsp pumpkin seeds

3 tbsp chopped pecans

3 cups of plant milk

3 tbsp of ground flax seed

3 tsp maple syrup

¾ tsp turmeric

2 pinches black pepper

¾ tsp Ceylon cinnamon

¾ tsp ground ginger

Line up 3 wide-mouth pint mason jars.

In each jar combine ½ cup of oats, 1 tbsp pumpkin seeds, 1 tbsp pecans, 1 cup of plant milk, 1 tbsp of flax, 1 tsp maple syrup

¼ tsp turmeric, 1 pinch of black pepper, ¼ tsp cinnamon, and ¼ tsp of ginger

Stir the ingredients in each jar with the end of a wooden spoon.

Seal jars with lid and keep in fridge for up to 5 days.

Mason Jar Salad

1. Dressing or sauce goes in the bottom.

2. Add cucumber, celery, jicama, crunchy red cabbage to the dressing.

3. Next layer is foods that will soak up dressing such as cubed tofu, mushrooms, beans, diced zucchini etc.

4. Next layer is grains.

5. Next layer is nuts and seeds.

6. Final layer is leafy greens.

Creamy vegan Caesar Dressing

3 tbsp vegan mayo

2 tbsp vegan Worcestershire sauce

1 tbsp Dijon mustard

½ cup olive oil

1 tbsp lemon juice

2 garlic cloves, minced

¼ cup nutritional yeast

Salt and Pepper To taste

Store in airtight container for up to 7 days in the fridge
