Holy Guacamole Jack-O’-Lantern Platter!

The lovely fresh ingredients used to make this delicious platter! Yum yum yum!
#SaturdaySnackdown! Erin Riley-Carrasco, PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50 shares her delicious recipe for guacamole served on this creative platter. Perfect for Halloween parties!
Opt for the organic chips if you can!
 Erin starts with big fresh ripe Hass avocados. She mashes the avocados to a chunky consistency. Then she uses her Magic Bullet blender to mix the rest of the ingredients. She puts lime juice, onion, sea salt, cayenne powder, tomato, garlic, cilantro, and a jalapeno pepper in the blender. Blend it up and mix it together with the smashed avocados. Garnish your plater with a fun little jack-o’-lantern and chips. There you go, a fun delicious Halloween guacamole platter to share with everyone! Happy Halloween!

Holy Guacamole! Recipe
Serves 4-5
 
– 3 Hass avocados
– 1/2 lime juiced
– 1/2 teaspoon sea salt
– 1/2 teaspoon cayenne
-1/4 medium yellow onion diced
– 1/2 jalapeno pepper chopped and minced
– 2 roma tomatoes seeded and diced
– 1 tablespoon chopped cilantro
– 1 clove garlic minced
Mash avocado in a bowl, leaving it slightly chunky.
Put all the other ingredients into a Nutribullet and blend, then add to avocados and blend, stirring with a spoon. If you don’t have a Nutribullet, finely chop all ingredients and add to the guacamole.
Carve a circle around top stem. Clean out the inside, getting out all of the seeds and pulp. Draw face on pumpkin with a black marker and then cut out with a knife. Set a tea light inside at bottom and light, then put the top back on the pumpkin on top so it glows… Place pumpkin on a large platter and spoon guacamole onto platter so it’s right outside the pumpkin’s mouth. Finish by putting organic stoned ground blue tortilla chips all around the platter. Super funny & festive platter to take to a Halloween Party! ENJOY!
