Salvadoran Calabazas (Pipián) Entomatados 

This Salvadoran dish is super simple to make, very filling, and healthy!

Ingredients
  

  • 2 squash/zucchini chopped/cut the ends off
  • 1/2 onion julienne or chopped
  • 1 1/2-2 tomatoes
  • 1 cube of "Not Chick'n" bouillon
  • Salt & black pepper to taste
  • Oil to slightly sauté or water if wanting it healthier
  • 1/2 -1 cup of water to boil everything

Instructions
 

  • In a medium sized pan, sauté onions & tomatoes for about 1-2 minutes & add "Not Chick'n" bouillon cube. Add cut up zucchini/squash. Season to taste with salt & pepper. Add water and cover. Medium to low heat for about 15 minutes or until zucchini is done.
  • Enjoy over rice or you can even add vegan cheese on top. Enjoy!
