- 100 gr of peanuts
- 1/2 a red bell pepper
- Vegan Mayo of choice
- Handful of parsley
- 1 onion
- 1 carrot
- 3 cloves of garlic
- Curry powder
- Cilantro powder
- Oregano to taste
- Black pepper to taste
- Salt to taste
- Chinese cinnamon to taste
Instructions
Chop or blend your onions, carrots, and garlic. Also, blitz your peanuts with your pepper alongside a pinch of curry powder and cilantro powder. Mix thoroughly with the pasta and the black beans in a large bowl. Infuse your vegan mayo of choice (quick tip: it's a 1:1 ratio of soy milk and oil in a blender if you want to make it really saucy!) with the parsley and the rest of the spices.
