Vegan Mac and Cheese (Healthy Version)

Ingredients
  

  • 3 medium carrots
  • 1/2 yellow onion
  • 3-4 garlic cloves
  • 1 large potato
  • 1 TBSP onion powder
  • 1 TBSP garlic powder
  • 1 TBSP paprika
  • 1/4 cup nutritional yeast
  • 1 TSP turmeric
  • 1 TSP salt
  • 1 TSP pepper
  • Plant milk optional
  • 1/2 box of noodles

Instructions
 

  • Cook noodles of your choice according to the package.
  • Chop carrots, onion, potato, and peel garlic to put into a large pot of salted water.
  • Bring water to boil and remove vegetables when carrot/potatoes become fork tender. Save a cup of the water to blend.
  • Add vegetables and the saved water to a blender with seasonings and blend until smooth.
  • Mix "cheese" with noodles and serve OR add to a baking dish to bake for 15-20 minutes. Feel free to add breadcrumbs on top!
