Tofu Piccata

Ingredients
  

  • 1 package of extra-firm tofu cut into bite-sized cubes and wrapped in towels to remove moisture
  • 1/2 onion finely chopped
  • 4 garlic cloves minced
  • 1 lemon juiced
  • 4 TB capers
  • 1 cup of vegetable stock
  • 3 tablespoons dairy-free butter
  • 2 tablespoons of minced or finely chopped fresh parsley

Instructions
 

  • Heat oil, add onions and sauté for a few minutes; add tofu and sauté until slightly golden on a few sides; add garlic and sauté for a minute, add the stock and cook until its fully absorbed, add butter, lemon, parsley and season to taste.
