BIG “FAKE” SALAD! VEGANIZED VERSION OF A “BIG MAC” SALAD!

Try this vegan Big Mac salad for a burst of flavor and a but of nostalgia.

Ingredients
  

  • 2 HEADS OF CHOPPED ROMAINE LETTUCE
  • 1 C TOMATOES CHOPPED
  • ¾ C SHREDDED VEGAN CHEDDAR CHEESE
  • ½ C CUT UP DILL PICKLES
  • 2 BEYOND MEAT PATTIES (OR ANY KIND OF BEEF/BURGER SUBSTITUTE
  • ADD A LITTLE SEA SALT AND BLACK PEPPER TO THE “MEAT” AND SOME CHOPPED ONIONS IF DESIRED AS IT COOKS.
  • FOR THE DRESSING:
  • ½ C VEGAN MAYO
  • 2 T SHREDDED/DICED PICKLES OR DILL PICKLE RELISH
  • 2 TSP MUSTARD
  • 1 TSP WHITE VINEGAR
  • ½ TSP SMOKED PAPRIKA
  • DASH OF PEPPER
  • 1 T SWEETENER

Instructions
 

  • Mix everything together and enjoy! Or, if you don’t want to make it all up at once keep the “meat” and dressing out of the salad and assemble when ready! YUMMY!
