can garbanzo beans – drained and rinsed

red onions – chopped

celery – chopped

red bell pepper - chopped

capers

dill – chopped

vegan mayo
1
tablespoon
mustard
salt and pepper to taste
Instructions
Pulse the garbanzo beans in your food processor or mash with the back of a fork. Set aside.
In a large bowl add the mayo, mustard, pickles, onions, celery, capers, red bell pepper, dill, and salt and pepper
Add the garbanzo beans to the mayo mixture and mix well.
To your bread, spread Dijon mustard and avocado slices (slightly smashed and seasoned with salt and pepper)
Scoop a generous serving of mixture onto the bread.
Top with sliced tomato and romaine lettuce.
Notes
Tip: Add shredded seaweed to your mix to give it that
seafood flavor.
