Better Than Tuna Salad

Ingredients
  

  • 1 can garbanzo beans – drained and rinsed
  • ¼ cup red onions – chopped
  • ¼ cup celery – chopped
  • ¼ cup red bell pepper - chopped
  • 1 tablespoon capers
  • 1 tablespoon dill – chopped
  • 1 tablespoon vegan mayo
  • 1 tablespoon mustard
  • salt and pepper to taste

Instructions
 

  • Pulse the garbanzo beans in your food processor or mash with the back of a fork. Set aside.
  • In a large bowl add the mayo, mustard, pickles, onions, celery, capers, red bell pepper, dill, and salt and pepper
  • Add the garbanzo beans to the mayo mixture and mix well.
  • To your bread, spread Dijon mustard and avocado slices (slightly smashed and seasoned with salt and pepper)
  • Scoop a generous serving of mixture onto the bread.
  • Top with sliced tomato and romaine lettuce.

Notes

Tip: Add shredded seaweed to your mix to give it that
seafood flavor.
