LET’S EAT.  VEGAN CASAR SALAD TIME!

This vegan Caesar Salad is made with crispy chopped romaine hearts topped with fresh baked homemade croutons, vegan parmesan, and creamy from-scratch caesar dressing.  It is such a refreshing and flavorful meal full of healthy ingredients.  It is the perfect salad for the hot summer days, so mix one up and eat it outside in the sunshine this summer!  Make a big batch for friends or family, they will love it!

Vegan Caesar Salad

Crispy chopped romaine heart topped with fresh baked homemade croutons, vegan parmesan, and creamy from-scratch caesar dressing
Course Salad
Cuisine Italian
Servings 1 person

Ingredients
  

  • Salad:
  • 1 Romaine heart
  • 10-12 large vegan croutons equivalent of one slice of bread
  • 2 Tbsp vegan parmesan Recommended Brand: Follow Your Heart
  • Generous drizzle of vegan caesar dressing
  • Vegan Caesar Dressing:
  • 1/2 cup raw cashews
  • 1/2 cup water
  • 2 Tbs extra virgin olive oil
  • 1 Tbs dijon mustard
  • 1/2 tsp garlic powder
  • 2 tsp tamari
  • 3 tsp caper juice
  • Fresh Croutons:
  • 1 slice Vegan bread Recommended: Sourdough
  • Heavy drizzle of olive oil to coat the bread
  • Generous sprinkle of Sea salt
  • Generous sprinkle of Garlic powder
  • Generous sprinkle of Nutritional yeast more than you think you need...pour it on!

Instructions
 

  • Steps for salad:
  • Chop, rinse, and dry romaine lettuce and add to a bowl
  • Make croutons (see below)
  • Make dressing (see below)
  • Add to salad bowl: croutons, vegan parmesan, and drizzle of your desired amount of dressing
  • Optional: Sprinkle cracked black pepper on top
  • Step for dressing:
  • Add all ingredients to blender and blend
  • Steps for croutons:
  • Chop bread into large cubes
  • Toss in a bowl with a heavy drizzle of extra virgin olive oil and coat with a sprinkling of sea salt, garlic powder, and nutritional yeast until all cubes are coated
  • Preferred cooking method: Air Fry at 400F for 4 minutes
  • If you don’t have an air fryer: Bake in the oven at 400F for about 15 minutes (or until brown and toasty) OR toss in a pan until all sides are browned.
