ANGELA YVONNE, A VEGAN LOVE STORY
Angela’s love story with media began after graduating from the University of North Carolina at Pembroke with a double B.S. in Public Relations and Broadcasting. Her comfortability with media behind the scenes as a publicist pushed her to the front, gaining keen knowledge of all things Pop Culture. Four years ago, Angela participated in Veganuary, a month-long challenge for those looking to go vegan, and has been loving life on the green side ever since. After becoming a vegan, Angela merged her love for a holistic lifestyle and pop culture to create Vegan Pop Eats, a brand that includes a TV Show, Live interviews, community connections, and engaging merchandise. Vegan Pop Eats aims to educate, showcase the hottest vegan spaces & trends and create a community for people on the journey to veganism. MUSHROOM TACOS MADE IN MINUTES
Mushrooms are used in many recipes as a “meat alternative” because of their texture and ability to absorb flavor so well. Angela uses cauliflower combined with mushrooms to come up with the perfect texture and flavor for her plant-based tacos. These are so easy to make, they would be perfect for those days you just don’t have a lot of time. Make them on Taco Tuesday, or any day of the week. they are that good!
Cauliflower Mushroom Tacos
- 1 Cup of Mushrooms of choice
- 1 Cup Of Cauliflower Florets
- 1 Cup Of Kale
- 1 Handful of Red Cabbage sliced
- 3 Tortillas of choice
- Coconut Aminos
- Saute with Onions and Garlic and Coconut Aminos for about 10 to 15 Minutes
- add a little water put a lid to steam the veggies and flavors together
- Plate torts and mix. Garnish with radish and avocado.
