YES, YOU CAN MAKE VEGAN RIBS.
Tonia uses Beyond Meat or Impossible Meat combined with jackfruit to get the “rib” texture desired for this dish. How genius is that? Jackfruit is the perfect choice with its shredded texture and ability to absorb flavor like a sponge. She then adds the best side dish for a plate of “ribs”…mac and cheez! Also 100% plant-based.
- 2 cans of young ripe jackfruit
- 12-16 oz Beyond Meat or Impossible Meat
- 1/4 C diced onion
- 1/8 C dark brown sugar
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp smoked paprika
- 2 tsp. liquid smoke
- 1 tsp black pepper
- ½ or more barbeque sauce I used Sweet Baby Rays
- Preheat oven to 375. Drain and rinse jackfruit. Shred jackfruit with fingers in a bowl. Add all spices and Beyond Meat or Impossible Meat. Mix well. Put on a sheet lined with foil and spray with cooking spray. Shape into a “slab” of ribs shape, (or shape of your bun if you are making sandwiches).Bake for 55-60 minutes. Remove from oven. Cut into strips and cover with BBQ sauce. Bake again for 10-15 minutes.
