SO, LET’S EAT THIS QUINOA BOWL RECIPE…LIKE NOW!

Quinoa bowl recipes are awesome because they are generally super quick and easy to make. They are versatile enough to allow you to add pretty much whatever you love to your bowl.  This one has artichoke hearts in it, hence the name quinoa artichoke salad….but I am still calling it a bowl!  Haha.  Quinoa is the perfect food, high in protein and fiber, thus super filling and healthy.  So this dish will keep you satisfied for quite some time.

Quinoa Artichoke Salad

This quick recipe is super filling, healthy, and full of flavor. With it's high fiber and protein content it is sure to keep you satisfied for a good amount of time.
Course Dinner, Lunch
Cuisine American

Ingredients
  

  • 3 C cooked quinoa
  • 3/4 C or small jar of roasted/grilled red peppers-chopped
  • 1 1/2 C or 1 regular sized can or jar of artichoke hearts-cut chunky
  • 1/4 C finely chopped raw onion optional
  • 2 Tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/8-1/4 tsp black pepper
  • 1-2 Tbsp oil optional

Instructions
 

  • Cook quinoa according to directions.
  • Mix all ingredients.
  • Great served cold or room temperature!
