Let’s Meet Our Chef, Courtney…

Courtney Grant has been vegan for 2 years, dealing with health issues, he made the switch to a plant-based lifestyle, and never looked back! Feeling as great as he did and seeing that so many people didn’t see the fullness of food and flavors that being vegan can bring, he wanted to start a vegan channel to uplift the community and bring awareness not only to vegans but to non-vegans as well! Cooking comfort food for him has been such a joy as he grew up in Jamaica and Florida with his family eating comfort food around the dinner table. Eating healthy is something he always strives for but every now and then a cheat meal or two won’t hurt. Now he is in California dishing out some amazing meals on his channel Vegan Cooking with Courtney, reaching as many people as possible. His journey started out with health and taking care of himself, which led him to now want to spread awareness not only to take care of yourself, but the environment that surrounds us and the animals that can’t defend themselves. Who Says You Can’t Have Pulled “Pork” as a Vegan?

Vegan pulled pork is easy to make with jackfruit and mushrooms, and Courtney shows us just how easy and delicious it is!  He uses jackfruit and mushrooms as the “pork.”  Jackfruit is the perfect ingredient to mimic shredded pork because of its shreddable texture and its ability to absorb flavors so easily.  Add the right spices and sauces, and you’ve got the perfect vegan “pork” sandwich that even your non-vegan friends or family will love.  It is so flavorful, and oh so delicious!  Then add your side of BBQ tofu and homemade chips and you have the perfect comfort meal.  The recipe is below so give it a try.

The Vegan Pulled Pork Sandwich, Chips, and BBQ Tofu Recipes

Preheat oven 375°F (190°C)

Firm Tofu: Place in cheesecloth on a plate and use a skillet or something heavy to press it down for about an hour, this will get all the water out of it. Make sure to get FIRM tofu. Slice it long and lay it down on a baking tray. Add olive oil, a teaspoon of all your seasonings: 21 seasoning, umami, garlic salt, onion salt, garlic salt, and a pinch of salt. Brush on garlic BBQ sauce and place in the oven for 45 minutes.

Sweet potatoes/potatoes: Slice your potatoes and sweet potatoes very thin. place them in a bowl and add 1 tablespoon of olive oil and mix well. Add a tablespoon of all seasoning: 21 seasoning, umami, onion salt, garlic salt. Mix well and place on your baking tray. Place in the oven for about 30 minutes and watch them. when they start to turn brown take those out and keep cooking the ones that aren’t done. flip them if needed.  I also placed some in the air fryer.

Preheat pan 320°F (160°C):  Add 2 tablespoons of vegan butter. Add your can of young jackfruit to your pan and chop while in the pan. Add half a tablespoon of all seasonings: 21 seasoning, umami, garlic salt, onion salt, garlic powered, and a pinch of salt. Mix well and add 1 small bag of enoki mushrooms and 1 tablespoon of vegan butter. Add a teaspoon of 21 seasoning, garlic powder, onion salt, umami. Mix well and make sure everything is soft and stirred well. Add 2 tablespoons of coconut amino, 3 teaspoons of Worcestershire sauce, and add half a cup of garlic BBQ sauce. Mix well and leave on one side to brown. Leave for 3-5 minutes on each side and let get a little cooked.

Place your bun in the broiler for 2 to 3 minutes and watch the bun so it doesn’t burn. Add butter to the buns

Plate your food and. ENJOY!!!
