I have had nice cream many times in my vegan life, but I have never had nice cream cubes!  They are like ice cubes, only full of flavor! Learn a healthy option for your immune system, while discovering new ways to enjoy dessert!! Join Kind Heart Coalition’s co-founder, activist, and artist Melanie Bazzell for these delicious and unique dessert treats!

Let’s Meet Our Chef

Melanie Bazzell is an artist and animal activist.   She rescues and rehabilitates chickens through her micro-sanctuary Om Tweet Om.

She continues educating the public about chickens and other animals as Co-Founder of her non-profit Kind Heart Coalition and her chicken art.

Melanie is also the organizer for San Diego Animal Save.

Let’s Have Some Nice Cream Cubes!

These would be perfect for a hot summer day, and summer isn’t THAT far away, so put this recipe in your archives for when the heat comes back.  These sweet little cubes are super simple to make, and the recipe makes 32 cubes, which should keep you satisfied for quite a few days!  You can use the fruits and flavors Melanie used in her recipe, or you can tailor the ingredients to your liking.  Use your favorite fruits like bananas or strawberries, or whatever you desire!

Course Desserts

Servings 32 cubes

Ingredients

  

1x2x3x

• 1/2 cup Peanut butter
• 2 cups Nut Milk
• 1 Tbsp Cinnamon
• 1/4 tsp Salt
• 1/3 cup Maple syrup or sweetener of preference
• 1 1/2 Tbsp Vanilla extract
• 1 cup blueberries
• 5 Dates optional

Instructions

 

• Blend and pour into an ice cube tray. Remove cubes from tray and enjoy!

Notes

Please feel free to substitute any key ingredients. This is your creation too! Add bananas, strawberries, mint dark chocolate chip....get creative!
