Aside From Her Moroccan Flair, Who Is Vanessa Marsot?
Vanessa Marsot is working on the soon to be published, Vegan Pole Dance Cookbook. She’s also preparing to go on a #VeganWorldTour spreading news as a #vegangelist of the #Vegonomy. As a Yale graduate, actress, model, writer, poet, yoga and pole dance instructor, personal trainer, and licensed psychotherapist, her mission is to stop animal suffering. Vanessa founded Ellora Wellness, a global vegan organic wellness center and one-stop-shop for creative, cruelty-free living. Ellora offers vegan, organic, ecological, non-toxic, and sustainable foods, products, and services. Ellora has dance, yoga, and fitness classes, healing arts, Sunday brunches, a boutique of clothes, jewelry, and decorative arts, and a grocery store of no plastic, zero-waste bulk products. These are the 4 pillars of health as she sees them—what you put in and on your body, the need for movement and creative expression, and the need for healing assistance every now and then. She is also currently working on a book form of Ellora, how to lead an eco vegan life. She welcomes everyone into Ellora as family members in a community space. It takes a community to make a community.
Vegan Morrocan Food, It’s So Easy!
You can use the secret ingredient Vanessa shares to make any concoction have that Moroccan flair you crave. The vegetables Vanessa used are what she had in her fridge at the time, but any combination of veggies should work. Instead of tofu, you could use beans. This dish is quickly prepared, and can be a soup with more water, a stew to serve over rice or quinoa, or keep it thicker and wrap it in a Swiss Chard leaf to make a wrap.
The spice mixture can be prepared ahead of time and stored in a glass jar whenever you’re craving a bit of Morocco. Are you ready for the secret ingredients? Baking spices! Moroccan cuisine is typically a mixture of spicy and sweet spices. Along with cumin, turmeric, pepper, paprika, and cardamom, we add my favorite oatmeal and baking spices–ginger, cinnamon, cloves, and allspice. The combination is awesome! Rich, pungent, spicy, smoky, and sweet! Your mouth will be a festival of flavors! And best of all, there are some major anti-inflammatory and anti-Cancer fighting spices at work here. Spices pack a whole lot of nutrition in their tiny yumminess.
Ingredients for spice mixture (Ras El Hanout)
- 1/2 tsp ground Cumin
- 1/2 tsp Paprika
- 1/2 tsp ground Coriander
- 1/4 tsp ground Turmeric
- 1/4 tsp ground Allspice
- 1/4 tsp ground Cloves
- 1/4 tsp ground Ginger
- 1/4 tsp ground Cinnamon
- 1/4 tsp ground Black Pepper
- 1/2 tsp salt optional
- Mix all spices together. Store excess in a glass jar.
Ingredients for Vegetable mixture:
- Use veggies of your choice
- Red Onion
- Butternut Squash
- Bell Peppers
- Purple Kale shredded
- Tofu cubed
- Chop all the vegetables and place in a saucepan over medium heat.
- Add seasoning mixture, and turn heat down low for about 10 minutes, until the vegetables are crisp but cooked.
- Add the kale pieces at the very last minute, so they stay fresh and crisp.
