Vegan shortbread cookies can be very beautiful, delicious, and perfect for this season! Wanna learn how to make them? Today Chef Suzi – Suzannah Gerber will show us how.  She is the author of the #1 Gourmet Cookbook of December 2020 called “Plant-Based Gourmet” ~ the perfect gift! Suzi is a regular contributor to VegNews, vegan executive chef, nutritionist, and medical researcher living in Boston, MA.  Let’s see how she created these incredibly delicious and oh so gorgeous cookies…

 

 

Who Is This Magnificant Vegan Cookie Maker?

Chef Suzi Gerber spent most of her 20’s critically ill and wholeheartedly believes a plant-based diet saved her life!

Now, Chef Suzi’s mission is to spread the message that a plant-based diet is not only good for your health and for the environment but can also be gourmet and does not sacrifice flavor.

Burdened by a chronic illness, Chef Suzi still managed to run a successful fashion company in New York City working with the likes of Vogue, Vanity Fair, Interview Magazine, the Jimmy Kimmel Show, Law and Order, American Horror Story and with her designs being worn by celebrities from Brooke Shields, Beyonce, and Madonna.

Suzi saw doctor after doctor and was on an extensive list of medications for years, but nothing worked. Her illness was so debilitating, she was able to do little beyond design. After years of treatments with well-respected doctors all over the country left her without answers, Chef Suzi uncovered research that would change her life– and she went vegan.

Within 2 weeks her symptoms were gone, and within a month she was off all medications! Suzi quickly realized that this was the path she needed to follow– the perfect combination of her youth work experience in kitchens, her background in medical research, and her artistic and curatorial eye all combined into her passion to pursue a career in culinary medicine.

Suzi studied, apprenticed, and worked as a traveling professional chef, sous chef, product developer – you name it – to work her way back up in the food industry. Within a few years, she started developing recipes and products for major retailers like Roots, Pressed, and Whole Foods, and some of the largest and most innovative CPG and foodservice companies developing flavor profiles, menus, recipes, and products for sale all over the world.

She had a feeling vegan was the right answer. She had been an ethical vegan in the ’90s but ironically was told by her family doctor that she needed to eat meat or risk destroying her health. She is grateful that her illness inspired her return to veganism, and even more grateful that the journey forced her to focus her creative talents on crave-worthy plant-based gourmet cooking. A vegan through and through, she knows that without delicious options many people would not choose plant-based and she is determined that everyone finds the vegan dish of their dreams.

Today, Chef Suzi runs Haven, a consulting group, which brings together her perseverance, background in medical research, and passion for culinary excellence, to advise and train thousands of people, doctors, chefs, and companies how to cook, brand, and develop plant-based foods, how to eat healthily, and how to thrive through food.

I am Craving Vegan Shortbread Cookies!

My mouth is watering after looking at these beautiful photos of Chef Suzi’s vegan shortbread cookies, decorated and shaped for the holidays.  These are gourmet cookies, that you too can make at home.  The recipe is pretty simple, so you just need to grab your holiday cookie cutters and start getting creative with your decorating skills.  This is a fun project for the whole family…and the reward is…you get a bunch of delicious cookies to grub on, on top of the priceless family time you get while making these cookies.

Let’s Get Baking Some Vegan Shortbread Cookies…Like NOW!

I don’t know about you, but I am so ready to start baking these cookies.  Vegan shortbread cookies are perfect for the holidays, especially if you have the Christmas themed cookie cutters to use.  They are a fun family activity too, so get the kids ready and bake some cookies for Santa’s visit.  And don’t forget to leave out a nice cold glass of plant-milk to go with his cookies.  I suggest oat milk :).  I think Santa would love oat milk.

Vegan Shortbread Cookies For The Holidays

Course Desserts
Cuisine American

Ingredients
  

  • 2 cups whole wheat pastry flour or half and half whole wheat flour and AP flour
  • 1 cup earth balance or Miyokos butter lightly softened
  • 2/3 cup granulated organic sugar
  • 3 Tbs cornstarch
  • 2.5 Tsp extract of choice or split between your favorites - for example 1.5 vanilla and 1 almond

Instructions
 

  • Preheat to 325
  • Cream your sugar. Add your sugar and butter into a mixer and beat until creamy and light.
  • Add the extracts (or optional food coloring!)
  • Cream butter-sugar well and smooth
  • Sift in flour and cornstarch slowly.
  • Turn out onto a baking sheet lined in parchment.
  • Roll to 1/4 inch thick
  • Cut to shape and layout on the baking sheet evenly.
  • Bake for 13 minutes
  • Let cool before decorating on a cooling rack
  • Add vegan sprinkles

Vegan Icing

Course Desserts

Ingredients
  

  • 2 cups powdered sugar extra to decorate
  • 1 Tbs maple syrup
  • 1 Tbs warm water
  • 1 Tsp flavor extract like vanilla
  • 10 drops food coloring or 3 drops gel color

Instructions
 

  • Stir together
  • Transfer to bottle or piping bag
  • Must be stirred in between uses
  • Optional for Linzer cookie sandwiches - peanut butter and jelly
