Who Is The Easy Breezy Whole Foodie?
Joya Wesley is a freelance writer and editor, a part-time farmhand, and the once and future manager of her father’s band, Fred Wesley and the New JBs. She is a minimalist currently living in a 160-square-foot tiny house near Austin, Texas. Before finding her way to the whole foods, plant-based lifestyle that’s now all she ever wants to talk about, Joya grew up in Los Angeles, earned a sociology degree from Stanford University, and worked for newspapers and as a national editor for the Associated Press. Later, she participated in and co-authored a book about the Greensboro Truth and Community Reconciliation Project, the first U.S. process modeled after South Africa’s. Rice and Bean Bowl
- 2 cups greens
- 1 cup pre-cooked beans any kind
- 1 cup pre-cooked brown rice or other grain
- 1 cup fresh chopped yellow onion
- 1/2 cup chopped mushrooms
- 1/2 cup raw red onion
- 1-2 cloves garlic
- 1/2 cup aqua faba
- other optional vegetables
- Thai chili powder to taste
- Build your bowl with all the ingredients
Vegan Cream Sauce
- 1/2 cup raw pecans or cashews
- 1/2 medium cooked potato
- 1 tbsp dijon mustard
- juice of 1/2 lemon
- 1 tbsp apple cider vinegar
- 1-2 cups water
- 3-4 cloves garlic
- Combine all ingredients in a high-speed blender.
Easy Breezy Smoothie
- 2 cups greens
- 2 cups fresh or frozen fruit
- 1 small steamed beet
- 2-3 inches fresh ginger
- 2 tbsp chia seeds
- 10 oz stevia-sweetened tea cooled
- Combine in a high-speed blender and enjoy.
