Vegan Pancakes Everyone Will LOVE!

Vegan Pancakes Are My Favorite!

Vegan pancakes are one of my favorite foods.  I just LOVE pancakes!  Fluffy, delicious, gooey heavenly pancakes!  And today’s guest Chef Susan Hargreaves shows us her special recipe for this all-American breakfast….but I’d eat them for lunch and dinner as well, for sure!

 

 

The Vegan Pancake Queen, But What Else?

Susan Hargreaves is a 41-year veteran of the animal rights movement. She is a kindness educator, author, speaker, and activist. She has rehabilitated wildlife and investigated animal cruelty in circuses, rodeos, and in the animal-based agriculture industry. She founded the youth-empowering charity Animal Hero Kids to prevent the animal cruelty she has witnessed by fostering empathy and compassionate choices in youth. Annual Animal Hero Kids Awards events recognize courageous, kind, creative youth — and all programs include a vegan fare component!

Wow, what an amazing woman.  So compassionate and ready to fight for the rights of animals, and protect them whenever possible.  And what better way to help the future of animals than to educate our youth about compassion and empathy!

Back To The Vegan Pancakes!

I just can’t get these pancakes out of my mind.  I might have to go buy the ingredients and make them for dinner.  Yes, I said dinner.  I love breakfast for dinner.  Haha, why not?  It is so easy to make vegan pancakes, leaving out all the cruelty and animal products!  They are just as tasty, and not nearly as unhealthy when you choose the vegan version.  They are nearly guilt-free 🙂

No Seriously, I am Making Vegan Pancakes For Dinner!

Veganza Vegan Pancakes Recipe

Course Breakfast, Brunch, Main Courses
Cuisine American

Ingredients
  

  • 1 cup of flour
  • 1 tablespoon of baking powder
  • 1 cup of unsweetened plant milk of your choice
  • 1 tablespoon of coconut oil
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • A pinch of sea salt

Instructions
 

  • Mix dry ingredients first
  • Slowly add in the middle the wet ingredients. Do not whisk. You want the baking powder to still be active, so be gentle while folding the ingredients in.
  • Pour into a non-stick pan with vegan margarine on medium heat and flip when there are bubble openings over most of the pancake. If you want thinner pancakes, add a little more plant milk to the batter.
  • Garnish with your choice of berries or bananas and maple syrup.
