MAGIC IN THE KITCHEN

Once again Tonia brings us a fun and energetic show with her easy plant-based recipes!  But her talents don’t stop in the kitchen.  She is an indie filmmaker and hairstylist from Michigan who has been doing vegan activism since 2018. Tonia is grateful to represent the Midwest on the JaneUnchained News Network. And we love having her!  She also has a YouTube channel called Your Vegan Friend Tonia that you should definitely check out.  It is fresh and fun and filled with lots of delicious recipes, plus other great videos about veganism and the vegan lifestyle.  From recipes to interviews, visits to animal sanctuaries, you can find it all on Tonia’s YouTube channel.

I am a big fan of Jackfruit….smother some BBQ sauce on it and you can’t go wrong!  I am looking forward to making this easy recipe at home this summer.  Quick and easy is my way of doing things, so it’s the perfect dish for me!  And the pickles too!

LET’S MAKE JACKFRUIT SLIDERS!

Jackfruit sliders are simple to make and once smothered in BBQ sauce it is the perfect ingredients to mimick pulled “pork” with its texture and ability to absorb flavor so well.  This recipe is a piece of cake to throw together so there are no excuses to not give it a try.  Your non-vegan friends and family will likely fall in love with this sandwich that is bursting with sloppy and messy flavor!

  • Refrigerator Dill Pickles
  • 1 1/2 English Cucumbers
  • 1 C. Water
  • 1 C. White Distilled Vinegar
  • 1 T Sea Salt
  • 2-5 Cloves of Garlic
  • 2-3 Sprigs of Fresh Dill

Instructions

  • Put cloves of garlic and dill in the bottom of a quart-sized jar. FILL with sliced cucumbers. (Feel free to pack them in the jar!). Boil the water, vinegar and salt. After they start boiling, turn they heat down to a simmer for 5 minutes. Pour the mixture over the cucumbers until the jar is full. Let it cool to room temperature. Put the lid on and put the jar in the fridge! They are ready to eat in just over 3 days, (best in 7) and will last in the fridge for several months!
