Dazzle in the sun with this refreshing summer salad. Vanessa Marsot of @Ellora Wellness was craving the tang and freshness of a Chinese cucumber salad but wanted to put some extra heat into it. Accordingly, she created this fresh and spicy recipe and is kind enough to share it with us!
One of the keys to this recipe is to slice the cucumber very thin so it’s juicy and really fully absorbs the dressing. She took advantage of the mildness of rice vinegar, along with the sweetness of ume plum vinegar. Some spice from chili powder or chili flakes, some fresh or dried dill, garlic, onion, red pepper, and you’ve got a multi-faceted salad with a variety of flavors, with the cucumber being the star. Best of all, this salad is raw and living, so it preserves all the nutrients. And it only takes minutes to prepare.
- 1 cucumber medium, peeled and sliced
- 3 TB rice vinegar
- 2 TB Ume Plum Vinegar
- 1/2 red onion diced
- 2 cloves of garlic chopped
- 1/2 red pepper diced
- 1 TB water
- 1 TB maple syrup optional
- 1 tsp chili pepper
- Chopped fresh or dried dill
- Pinch of salt
- Thinly slice cucumbers and place in a bowl.
- Add the rest of the ingredients and mix well.
