Jane Elizabeth is an author, motivational speaker, fitness coach, athlete, business owner, musician, and mom.  After spending nearly two decades working in sales, management, and human resources, she found that what she most enjoyed was mentoring others.  With a leap of faith, a kick-ass work ethic, and a lot of grit, Jane turned her passion for serving others into her full-time career.  Using her unique blend of humor, badassery, and compassion, Jane captivates audiences large and small.

Jane has a very unique back-story.  She once was an overweight, asthmatic who struggled with low self-confidence and thought she would always feel trapped in her body.  Jane realized she was responsible for her life, her health, and the example she was setting for her daughter.  With that, she set out on a journey to completely change her life.  With a new focus on creating a healthy vegan lifestyle, Jane lost over 80 pounds.  She is now an endurance athlete, with no asthma symptoms.  Armed with her knowledge of health and wellness, Jane continues her mission to help others.  She inspires and motivates others to create the life they’ve always wanted, by openly sharing her own story.

Although Jane holds many titles, being a mom is her favorite and most important title of all.  She most enjoys spending time with her daughter and their rescue dogs.  Originally from Minnesota, Jane and her family now reside in the Los Angeles area and thoroughly enjoy the California vibe.

Badass Quinoa & Veggies: meal prep made easy!

Course Main Course, Lunch, Dinner
Cuisine American


  • 1.5 cups Quinoa dry
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 1 onion chopped
  • 1 cup broccoli chopped
  • 1 package firm organic tofu diced
  • 1 can organic chickpeas drained & rinsed


  • Seasoning as desired (ground black pepper, garlic, onion powder, oregano, chili powder if you like it spicy)
  • Cook quinoa as directed (1.5 cups quinoa/3 cups water)
  • In a separate pan, sauté veggies & tofu, using veggie broth if needed to prevent sticking. Add seasoning to taste
  • When veggies are cooked through, remove from heat.
  • Place veggies over quinoa, add your favorite sauce, and serve!
