Post Oscar dinner on One Veggie At A Time! Whether you watched The Oscars last night or not try Sarah Londonโ€™s Soyrizo Potato Tacos tonight on One Veggie At A Time with our host Antoinette Westcott. Sarah is a Filmmaker & Actress working on her next film.

A few simple ingredients and you’ll have everyone in love with you or maybe just your tacos!

Sarah has a very unique story about how she decided to go vegan. After a traumatic breakup, Sarah needed a new place to live. She found a dream apartment at a great price but her prospective roommate said you have to be vegan to live her. She decided in order to live in the apartment she wanted she had better agree to be vegan. So she did! She, her roommate, and her roommate’s vegan pitbull lived happily together. After a year of being vegan with her roommate, Sarah didn’t look back, even after moving onto her next living situation. Now she’s a true vegan who can’t stand the idea of eating meat!

Antoinette and Sarah love these tacos and so can you!

Antoinette and Sarah get to chopping as Sarah tells us about her new film. First, Sarah shows Antoinette how not to chop off her fingers! Sarah keeps her description superficial, not wanting to dive in too deeply into the meaning of her latest project. She says her film is experimental and it is about breaking “generational trauma.” It sounds like a film we had better check out to understand what she means! In the meantime, Antoinette and Sarah get back to making the tacos. Sarah recommends rinsing the potatoes before you cook them to take out some of the starch. We learn something new every day on Jane Unchained, Antoinette explains!

Don’t forget the “avo-cat-o!”

Sarah is full of great cooking advice! She explains how to “blanch vegetables” in boiling hot water for a minute and immediately in cool water afterward. She says that it cooks the vegetables just enough but doesn’t cook the nutrients out of them. Next, Sarah puts salt into the water the potatoes are soaking in because “salt brings out the flavor of the food.” After the potatoes are done soaking, she shows us how to cook the potatoes in her cast-iron skillet. She says you have to use a hot pan and cold oil or whatever you’re cooking will stick to the pan. After the filling is fried up Antoinette and Sarah places it into the oven-roasted tortillas. You can garnish them with fresh avocado or “avo-cat-o” as Sarah calls it in a tribute to her cat, Chica. Sarah also tops the tacos with arugula instead of the traditional iceberg lettuce. To top it all off, Sarah sprinkles on her champagne vinegar pickled onions. Now, these tacos are truly gourmet! Sarah shares her tacos with her friend, Antoinette, her lover, Mike. Sweetheart Soyrizo Potato Tacos

Ingredients
  

  • 12 oz. Soyrizo
  • 1 lb. yellow potatoes
  • 1 tablespoon grapeseed oil
  • 4-6 corn tortillas
  • Seasonings: salt pepper, garlic powder, smoked paprika, oregano
  • Shredded lettuce topping
  • Diced tomato topping
  • Guacamole topping

Instructions
 

  • Pre-wash all ingredients. Dice up potatoes & onions into small cubes. Pre-heat pan on Medium heat, toss in potatoes for 4-5 minutes then add onions. Put tortillas in oven to warm on the lowest setting (175' we don't want to cook them just warm). Add seasonings to potatoes & onions. Once cooked thoroughly, add 1 package Soyrizo. Stir frequently for about 2-3 minutes until heated. Build taco & eat!
