Vegan News Flash…Breakfast is the best meal of the day.  What’s your favorite meal?  Mine is breakfast.  Breakfast for breakfast.  Breakfast for lunch.  And breakfast for dinner.  No joke…I LOVE breakfast foods. On this episode of #LunchBreakLIVE we are having brunch…otherwise known as breakfast, in my eyes.

Jesse G Amaro of Love “Amaro Pizzeria,” cooks up an unbelievable rolled omelette stuffed with sautéed poblanos and Follow Your Heart cheese.  Yes, please! This is a heavenly meal.  Nothing like a fluffy omelette for lunch!  Oh but wait, the omelette is then placed on top of freshly cooked pizza dough.  C’mon!  So yum!  I was so excited about this episode because it wasn’t long ago that I would say how much I missed eggs as a vegan.  That fluffy morning meal drenched in melted cheese.  And then BAM, Hampton Creek introduces Just Egg into the world.  This product is brilliant.  Looks like eggs, cooks like eggs, taste like eggs.  All without the horrific cruelty that comes with eggs from hens.  Amazing.  A dream come true.  And Just Eggs is what is used in today’s recipe.  So enjoy!

When Jesse G Amaro is not cooking up amazing breakfast meals, he is running a popup pizzeria around the Inland Empire and Los Angeles.  People line up to watch him make his beautiful creations, truly made with heart.  Jesse takes his vegan cooking to the next level by always selling food that looks like it has been styled for a photoshoot.  He believes the presentation of food is just as important as the taste. So Jesse takes the time to not only make food that tastes delicious, but also looks amazing.

Jesse’s popup, Love Amaro Pizzeria is a gourmet Neapolitan pizzeria.  Jesse puts his heart and soul into the food he makes, hoping to create a culinary experience you won’t soon forget.  He’s also known for the speed at which he cooks.  The crowds of people love to watch him make his pizza because it is such an eye-catching show.  Be sure to check out his Instagram daily, to find out where you can pick up some of Jesse’s awesome grub.

Here is the recipe for this fun and unique breakfast (or lunch or dinner) vegan omelette.

 

Just Egg Rolled Omelette

Vegan omelette stuffed with sautéed poblanos, onions, and Follow Your Heart cheese, on top of pizza bread
Course Breakfast
Cuisine American

Instructions
 

  • Fluffy pizza dough of your choice! Preferably Love Amaro dough.
  • Make the dough into an oval shape boat. Bake on broil.
  • Smash 2 Avocados add some lemon and Himalayan salt
  • Pour the "Just Egg" into slightly oiled pan, cook until brown
  • Sauté onions, green peppers, and poblanos
  • Stuff and roll the onions and peppers into the omelette
  • Add the Follow your heart cheese
  • Add Raw Green salsa
  • Top with Follow Your Heart sour cream, garnish with thinly sliced radish and green peppers
  • Place on top of the cooked dough
