THE RECIPE

Vegan Quinoa Bowl

make 1 cup of quinoa

heat a large skillet over medium/high heat

add 3 tablespoons grapeseed oil to the skillet

add one diced onion, saute until golden brown

add 1 seeded, diced red bell pepper and cook for one minute

stir in the cooked quinoa

add 1 tablespoon soy sauce

stir in 1 cup baby spinach

add 1/4 cup frozen peas

stir in two scallions, white and light green parts only

place in a bowl and enjoy!
