If all you want is a warm hearty meal full of all the flavors and comforts of home… Annie has the dish for you! Annie has veganized the Mediterranean favorite eggplant dish similar to moussaka by removing the meat and using a Beyond Meat patty instead! Annie gets right to work peeling her eggplant in seconds! This woman has skills! Next, she dices a whole onion, the Beyond Meat patty, and half of the red pepper to add to a pot. She puts the pot on the heat next to the already simmering pot of rice so that those ingredients can cook up too. Then she takes the eggplant in another pot and adds water so it can cook at its own pace. She mixes her flavorful spices including citric acid for lemon flavor, together and adds those to the freshly cooked onion and peppers saute. Annie adds in her secret, not so secret spice blend we’ve never heard of, Vegeta! As the rice finishes cooking, she adds a frozen vegetable medley to power pack this dish with even more veggies!

These special spices are sure to tantalize everyone’s taste buds!

Once the dish is all done, Jane is ready to dive in for the taste test! It’s piping hot so she has to try it slowly but says it’s absolutely delicious! She says the dish is bursting with flavor, and is just the pick me up anyone needs during the cool gloomy weather! But Annie isn’t done… She serenadea us, with fellow amazing activist Micheal Fujimori on the guitar, with her original song for the animals called, “Animals are Like You and Me!” Try making this delightful dish at home and don’t forget to serenade whoever you cook it for!

Eggplant Delight & Rice


🌱Mediterranean Vegan Oil-less Savory Eggplant Delight & Rice on the side
🌱PREP TIME:
45 min ~1 hour
🌱CUISINE: Vegan
🌱SERVINGS: 4~6 🌱MATERIAL:
•3 Medium Pots/Pan w/Lids)I’ll #them 1,2,3 to clarify)
•Large Spatulas, Tablespoon, Teaspoon, Knife
I🌱INGREDIENTS
•2 medium Purple/Black Eggplants
• 7 cups water(3 for Eggplant & 3~4 for the rice)
•4 cloves Garlic (peeled & crushed)
•1 large onion sliced thinly
•1/2~1 red/green bell pepper sliced thinly 2~3 inch long
•1~2 fresh tomatoes sliced in rounds of 1/4 inch thick
•1 chopped fresh parsley(optional)
•1/2 Beyond meat cut/crumbled
•1-2 Tablespoonful tomato paste/salsa
•1 cup Basmati or jasmine rice
•1/2 cup of frozen veggies
•Salt, 1 tsp (To your taste)
•Turmeric, 1/4 tsp
•Lemon Salt 1/4 or small Lemon 1/2 tsp
•VEGETA=Veggie base powder
🌱PROCEDURE
•Sauté the thinly sliced onion, 4 crushed garlic clovers, 1/2~1 crumbled Beyond-meat Burger & 1/2 cup of water in Pot #1, cover & heat up on medium-high for a few minutes then add 1~2 round cuts sliced tomatoes then add from Pot#2 the softened Eggplants from •Pot#2 Partially peel thin skin of the two Eggplants, then cut them in about 1 inch thick x 3~5inch long • In Pan#2, bring 1cup of water to boil, then add the cut Eggplants in it, place the cover & let simmer in low medium heat, flip sides after a few minutes or until all pieces softened then add to Pan #1
•Add the 2~3 tablespoon tomato paste/ salsa, finely chopped parsley, 1 teaspoonful salt, 1/4 teaspoon Turmeric, 1/6 teaspoon or a sprinkle of Black-pepper( to make turmeric must effective), add 1/4 teaspoon Lemon Salt/or 1/2 Lemon juice to taste
•Pan #3 wash 1 cup of rice, then add 3 cups of water & 1/2~1 teaspoon of Vegetal=Veggie base powder, cover the Pan & jet it all come to a boil, then lower to medium heat until almost all cooked,then add the 1/2 cup of frozen veggies, cover for a few minutes then serve w/the Mediterranean Eggplant Oilless Delight🍆🌶🍅🍚Bon appétit🌱💚🌟
