Brian Mejeur

Brian was an engineer at SpaceX and the Head of Operations at a drone data company. While working on cutting-edge rocket and drone technology, he’s developed his prowess for managing logistics for complex processes, attention to detail, and an aptitude for solving problems.

Until Brian met Seyka in 2015, he had a traditional western diet with a large intake of animal products. After he fell in love with Seyka, his diet began to evolve. Through learning about her passion and the facts concerning the consumption of animal products, Brian has transitioned to be vegan. His transition provides a meaningful perspective on the value of a diet focused on plants.

The Recipe

 

INGREDIENTS:
Tempeh Bacon
Sandwich Ingredients

INSTRUCTIONS:

Bacon
  1. Cut the tempeh into bacon sized slices. Heat the olive oil in a skillet and brown the tempeh on both sides. While the tempeh is cooking, mix the liquid aminos, the pineapple juice, and garlic powder together in a separate dish. Once the tempeh is browned, add a tablespoon of water, followed by the liquid amino pineapple mix that you’ve created, coating the tempeh evenly and letting the sauce thicken on the tempeh. Turn the heat off and let the bacon rest in the pan.
Sandwich
  1. Toast the sourdough slices for the sandwiches. Take the garlic clove and rub over the toasted sourdough to get the fresh garlic on the bread. Spread the mayonnaise on one slice of the bread. Add avocado on one side of the bread. Add sliced heirloom tomato to the sandwich liberally. Add a lettuce layer. Add a bacon layer, slice and enjoy!

You can make healthy, delicious VLT’s which are Vegan BLTs. These are crowd favorites and give me all the comforts of  Grandmother’s BLT sandwiches, without any of the health compromises, harm to the planet, or harm to animals!
