This delicious Lentil Bruschetta Dip with Vegan Feta Cheese is a definite go-to recipe for this hectic time of year and is perfect for holiday gatherings or to whip up in your home for a protein-packed, healthy meal.  It has been a favorite at our family holiday parties for years and is always the first to go. It only takes 20 minutes to make the Lentil dip, including the fresh bruschetta w/ organic basil, garlic, balsamic vinaigrette, olive oil, and organic Roma tomatoes. Pair with your favorite Pita, Tortilla or Corn Chips. Quick, easy, healthy, tasty and cruelty-free. My favorite kind of appetizer! Enjoy!

 

All the ingredients for this amazing and delicious vegan appetizer.

 

THE RECIPE

 

Ingredients:

1 box Trader Joe’s steamed Lentils (ready to eat) 
1 box Violife Vegan Feta Cheese  
6-7 Roma tomatoes
1/2 cup fresh basil, chopped
2 fresh cloves crushed/minced garlic 
2 tablespoons Extra Virgin Olive Oil (*I used basil flavored)
2 teaspoons Balsamic Vinegar
1 teaspoon of sea salt
1 teaspoon black pepper
Chips of your choice. I used Trader Joe’s Organic Corn Dippers, Trader Joe’s Black Quinoa Tortilla Chips and Trader Joe’s Organic Pita Chips. You can also use fresh-cut vegetables to serve with the dip.
 

Recipe:

Mix the steamed lentils, Roma tomatoes, vegan feta cheese, fresh basil, fresh garlic, olive oil, Balsamic Vinegar and salt and pepper to taste in a large bowl. Taste a spoonful and add a little more Balsamic Vinegar if desired. Put in a serving bowl on a platter and pour chips around the bowl.

The finished dish! So pretty!
