Vegan Activists Dish It Up on LunchbreakLIVE!

Meira and Lee, two vegan activists spreading peace by sharing their lifestyle choices!
Join today’s LunchBreakLIVE with millennials who make magic in the kitchen. Watch as JaneUnChained intern Activist/Animal Lover and Singer Meira Geyser along with Lee, Activist/Vegan Chef and Sign Maker create delicious pasta and fresh raw lumpias!
This pasta is simply delicious!
Lee gets right to work making his raw lumpia appetizer, specially requested by Bianka a.k.a. Raw Shakti on Instagram. He chops up carrots in a hurry and gets the jicama ready for chopping too. While he does this, Meira gets the tricolored pasta boiling. Then she cooks the mushrooms almost whole, only removing the stems. Super fast and easy! Lee makes a simple sauce with vegan bullion, brown sugar, and soy sauce. Meira hops back in and she finishes the mushrooms and starts sautéing the tomatoes! She explains that cooking the tomatoes this way, makes them sauce-like for the pasta! This pasta is great for Meira who has struggled with allergies rendering her almost vegan her life! When the pasta is all finished, Jane tastes it and gives it 5 stars! If you want to make a meat sauce you can add plant-based meat like Beyond Beef ground meat to achieve that without killing a cow, Jane explains. Lee skillfully wraps up his raw lumpia creation and shows us why he is so deserving of his upcoming Filipino restaurant/pop-up creation called Salamat Vegan. Kenziah and Jane are blown away by how good the lumpias are, no frying needed!

Lee is famous in the vegan community for his amazing signs. He brings one of his signs with him today that reads “Be 1 Less Person Hurting Animals.” Lee and Meira are also activists in the Los Angeles area. Today Lee is promoting the upcoming March of Silence M.O.S.A.I.C. festival coming up on September 12-15th. The event will feature a potluck, speakers, and music. It will also be packed with animal rights activism as well as starting off with their annual march in complete silence to bring awareness to animal liberation, human rights, and saving our planet. Ingredients:

1 Box of tri-colored pasta
1-2 large tomatoes
1 container of mushrooms
1/4 cup of Olive oil or enough to coat the bottom of the pan
Fresh tarragon
Salt, black pepper, red pepper, garlic to taste
Directions:
  • Boil water and put in half a box of pasta according to the box’s serving size. Cook for 7-9 minutes.
  • Coat bottom of a saucepan with olive oil and heat on medium. Place mushrooms, red pepper, and salt in a pan. Cook and stir mushrooms until soft or for around 5 minutes.
  • Coat bottom of a saucepan with olive oil and heat on medium. Cut up tomatoes and place in a pan with garlic, black pepper, and salt. Cook and stir tomatoes until soft and oozing or for around 5 minutes.
  • When finished cooking, mix pasta, mushrooms, and tomatoes, along with seasoned olive oil from saucepan together. Add fresh tarragon according to taste.
