Tracy Childs of Veg-Appeal and Nicole Van Logtenberg of Health Kick on JaneUnchainedLIVE in Poway near SanDiego! They’re together in Tracy’s kitchen celebrating summer seasonal foods & making a simple Fruitalicious Kale Salad & a Watermelon Turmeric Slushy! Can you guess what seasonal fruits they’ll put in our amazing creation?

You may learn some yoga moves at their event you can use while you’re cooking in the kitchen!

Connect your mind body and spirit at the Seasonal and Soulful Pop-Up Tracy and Nicole are organizing. Nicole will be instucting yoga and guided meditation. Tracy will be making a delicious 3-course meal that will be 100% vegan and leave you feeling uplifted. As an added bonus there will also be chair massages. You may wonder if you’re in heaven at this event so don’t miss it if you can get down to San Diego!

Tracy explains watermelon juice is great for you because it is very hydrating and full of lycopene. Nicole says as an added bonus kids love it and may even prefer it to orange juice. A little mint makes it refreshing without overpowering the flavor. Turmeric is anti-inflammatory and helps prevent cancer. It also helps hydrate your muscles and repair them so it’s great for using pre and post-workout. Tracy says it even helps her breathe when she drinks it before she goes for a run. Tracy adds black pepper because it helps activate the curcumin that is the medicinal property in the turmeric.

Tracy likes to use the curly kale in her kale salads. Kale is full of nutrients including calcium. Tracy points out that you don’t need to consume dairy to get calcium in your diet. You can get just as much calcium from plants! Nicole shows us how she strips the kale off the stem in literally one second. You can also tear it off as Tracy demonstrates. Nicole massages the kale to break it down. Then, Tracy and Nicole massage in avocado and hemp seeds. The hemp seeds are packed with protein and the avocado has lots of potassium. Nicole points out that we should be mindful of where we source our ingredients. If we get them from great distances, the emissions to get them here are harmful to our planet. Tracy adds some dulse, which is a seaweed seasoning that’s great for your thyroid and adds flavor without adding salt. Fruitalicious Kale Salad
1 bunch curly kale
2 teaspoons lemon juice
½ small avocado, cubed
1 tablespoon hemp seeds
2 teaspoons nutritional yeast
1 teaspoon dulse seaweed seasoning (optional)
Salt and pepper to taste (optional)
2 thinly sliced green onions
½ cup fennel fronds, chopped (optional)
½ cup mint leaves, chopped (optional)
1 cup seasonal chopped colorful fruit (nectarines, peaches, pears, mangos, tangerines, oranges,
apples for example)
1. Wash the kale and remove the stems. Chop it into small pieces and place in a large bowl.
2. Add the lemon, avocado and hemp seeds and massage them well into the kale, breaking
it down into very small pieces.
3. Add the seasonings and fresh herbs and stir well.
4. Add the rest of the ingredients, toss, and chill until ready to serve.

 

Watermelon-Tumeric Elixer
makes 3 1 cup servings
2–3 cups watermelon
1 tablespoon lime juice
3/4 tsp turmeric or 2 tablespoons fresh, roughly chopped
1 tablespoon fresh ginger, roughly chopped (optional)
few grinds pepper
1/2 cup ice (optional)
Blend until smooth!
