Get Ready For The 4th Of July With Festive Treats!

Today #Live on #SaturdaySnackdownErin Riley-CarrascoPETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50, is making whimsical and delicious Mini Caprese Bites, Skewers and the more traditional presentation of beefsteak tomatoes slices with the vegan mozzarella slices, fresh organic basil & Balsamic Reduction. These delicious hors d’oeuvres are perfect for backyard summer parties and today, Erin went with a fun, 4th of July theme for the upcoming holiday. Being vegan has never tasted or looked so good!  Enjoy! 

 

 

THE RECIPE
Makes about 20 Mini Caprese Bites
Makes 8-10 Caprese Skewers
Makes 8-10 Traditional Caprese tomatoes

Buy mini toothpick American Flags if wanting to use for July 4th Celebration (purchased mine for $1.00 at Michael’s.)  If not, use plain toothpicks.

20 whole cherry tomatoes (for bites)

20 whole grape tomatoes (for skewers)
2 large beefsteak tomatoes (for traditional presentation)
20 fresh Basil leaves
1 package Miyoko’s Mozzarella Ball
Balsamic Reduction or Olive Oil
MINI CAPRESE SALAD BITES
Cut vegan mozzarella into two tiny squares for each “cappers bite.” Using flag toothpicks, pierce the vegan mozzarella squares through a folded basil leave and cherry tomato on top. Sprinkle with salt and pepper to taste and drizzle with Balsamic Reduction or Olive Oil. Place on a festive platter and serve!
CAPRESE SKEWERS
Using bamboo skewers, skewer folded basil leaf, small mozzarella ball that you made/molded from the large Miyoko’s vegan Mozzarella Ball and grape tomato. Repeat this order until the skewer if full! Add salt and pepper to taste and drizzle Balsamic Reduction or Olive Oil on top.
TRADITIONAL CAPRESE
Cut large beefsteak tomatoes into sections, add two large basil leaves then place a large chunk of Miyoko’s vegan Mozzarella cheese on top. Add salt and pepper to taste and drizzle with Balsamic Reduction or Olive oil. If wanting to use for 4th of July party, put an American flag down the center as pictures. ENJOY!
