Vegan Coconut Balls For Energy!

Sandra explains that this is the perfect snack for in between meals. If you’re looking for a late afternoon pick-me-up this is the snack for you! Sandra starts the recipe with shredded coconut. Then she adds rolled oats and hemp seeds. Hemp seeds also known as hemp hearts have 10 grams of protein per serving, so they are packed with plant-based protein.  They also have a delicious nutty flavor. Sandra uses chia seeds as a superfood plant-based binder to form the ball shape. She even adds turmeric, which is wonderful for fighting inflammation and disease.  There no question why these balls will energize you with beneficial ingredients in this recipe. Ingredients

  • 1 cup oats
  • 1 cup shredded coconut
  • 2 tablespoons hemp seeds
  • 1 tablespoon chia seeds
  • ½ teaspoon maca powder
  • ¼ teaspoon turmeric
  • Pinch of sea salt
  • ⅓ cup maple syrup
  • ½ lemon, juiced
  • 1 tablespoon lemon zest
  • 1 tablespoon Earth Balance® Organic Coconut Spread, melted
  • ½ teaspoon almond extract
  • Extra shredded coconut for rolling

Steps

1. To the bowl of a food processor, add all ingredients through sea salt and blend until a fine mixture is formed.
2. Add remaining ingredients and pulse until just combined and a sticky dough forms.
3. Transfer to a bowl and refrigerate for 20 minutes.
4. Taking 2 tablespoons of dough, roll between the palms of your hands to create bite-sized balls. Then, roll each ball in shredded coconut for extra flavor.
