It looks like Egg Fried Rice But It’s Tofu!

Ready for some Asian cuisine? Of course you are! #LunchBreakLIVE features vegan couple Shawnee Badger and Ankur Patel as they create tasty Teriyaki Tofu and Fried Rice. Looks like egg fried rice, but without the cruelty and cholesterol! Shawnee, an actress, model and animal rights’ activist, assists regularly at various festivals, educating the public about animal rights, while Ankur is Director of Advancement for Hindu University of America and substitute teaches for Unified School District. This power couple advocates for human and animals’ rights!

 

 

These are must have items for any vegan kitchen! Tofu, nutritional yeast, tamari, sesame oil & vegan teriyaki sauce!
  • Teriyaki Tofu and Fried Rice

    Teriyaki Tofu:

    1-½ package of Extra Firm Tofu, drained

    1 TBSP Sesame Oil

    Teriyaki Sauce

    Chop your extra firm tofu into cubes and fry in a pan of sesame oil. Once browned, add in your teriyaki sauce! Serve with fried rice!

    Fried Rice:

    1-2 TBSP Sesame Oil

    ½ Onion, chopped

    2-3 Cloves Garlic, minced

    2 Pinches of Salt

    ½ Bag of Frozen Peas/Carrots

    ½ Bunch of Kale, chopped

    1 Cup of Day Old Rice, cooked

    2 TBSP Soy Sauce

    1 TBSP Butter

    ½ Block of Tofu

    ½ TBSP Nutritional Yeast

    A Sprinkle of Tumeric

    Juice of ¼-½ of a lemon

    ½ Bunch of Kale, chopped

    1-½ Lemon

    Hot Sauce, to taste

    Top with Sesame Seeds

    Saute onion in 1 TBSP of sesame oil and with a pinch of salt until fragrant and translucent. Throw in the garlic and continue cooking until fragrant (1-2 minutes). Add frozen peas and carrots. Season with another pinch of salt.  Cook until frozen veggies are thawed and softened. Add your chopped kale and cook until tender. Remove onion/garlic/veggie/kale mixture from the pan and transfer into a bowl. Set that to the side.

    Crumble ½ block of tofu into a bowl and season with lemon juice, turmeric, and nutritional yeast. Stir until all of your crumbled tofu is evenly coated. Cook over medium heat for 5-10 minutes or until it is as dried out as you like it!

    Add a bit more sesame oil into the pan and add your day old cooked rice. Let that fry until it is warm and then add your veggie mixture and tofu egg, vegan butter, and soy sauce. Fry until hot! Top with sesame seeds, hot sauce/sriracha, and/or lemon juice if you’d like!

    This is a protein packed dish because it contains kale and tofu, two protein rich foods.
