This recipe of Turmeric and Cumin-spiced cauliflower and cauliflower mashed potatoes are both great if you are trying to cut down on your carbs and want to incorporate HEALTHY recipes into your weekly schedule!  Cauliflower provides lots of FIBER which is so important! Peta’s 2017 Sexiest Vegan Over 50

Erin Riley-Carrasco owned and operated a thriving dance studio for many years and has been fighting for animals rights for decades.  Erin Riley-Carrasco has also been named the female winner of PETA Prime’s 2017 Sexiest Vegan Over 50 contest.

Recipe:  Turmeric & Cumin-Spiced Cauliflower

1/2 cup olive oil

4 cups raw cauliflower rice (after cleaning, take off stem & leaves and grate cauliflower or put in food processor until the cauliflower is the size of rice)

5 teaspoons ground cumin

1 1/2 teaspoon fine sea salt

1 teaspoon ground coriander

1 teaspoon ground turmeric

1/2 teaspoon freshly ground black pepper

2 tablespoons fresh lemon juice

Heat a large pan over medium heat and add olive oil.  When the oil is hot, add cauliflower, cumin, salt, coriander, turmeric and pepper and stir to combine.  Cook stirring frequently until the cauliflower is cooked through and tender.  About 8 minutes.  Stir in lemon juice, season to taste with additional salt and pepper and serve hot.  Put a pat of Miyoko’s vegan butter if desired.

Recipe:  Caulifolower Mashed Potatoes

Clean a head of cauliflower, then steam cauliflower over stove and drain when finished.

Mash cauliflower and add 1 tablespoon of Miyoko’s vegan butter, 1/4 cup vegan cream cheese (if desired).  Add some organic green onions on top and salt and pepper to taste.  ENJOY!
