Vegan Food in a Flash!

#LunchBreakLIVE stars Stephanie Williams of Vegan, What? which puts out the #DopeMealPlanner, a plant-based subscription meal service online! Stephanie is making three super fast vegan meals: blueberry overnight oats, sweet potato banana mash, and apple buttercups! Simone Reyes is today’s tantalizing taste tester!
Breakfast just got sweeter with this banana mashed sweet potato!
“In and out of the kitchen in no time,” is music to our ears! Stephanie is serious as she puts that sweet potato in the microwave while she prepares the rest of the dishes. Make sure to check the ingredients of your almond butter to make sure it is simply almond butter and salt. No need for any other ingredients. Also make sure there sure there is absolutely no milk in your chocolate chips. “Dairy is Scary” after all!

Stephanie started her plant-based journey seven years ago. Stephanie was inspired by Alicia Silverstone and her book “The Kind Diet.” She was able to gently transition to a compassionate lifestyle with this guidance. Stephanie came up with name Vegan, What? because when she told people she was going vegan, they would say “What?”  The Dope Meal Planner Stephanie incorporates, helps people transition and discover the joys of a vegan diet by trying veganized meals that mirror the nonvegan meals they love.

Wow these three creations were made in a flash! That’s what we’re talking about! Simone Reyes hops in to taste test and says it is so good and filling. She says it makes for a perfect breakfast to get your day off the right start! If you don’t want to wait overnight for your oats, Jane thinks they are pretty good a few minutes later. Blueberry Overnight Oats

Course Breakfast

Cuisine American

Prep Time    5 minutes

Cook Time   5 minutes

Servings      1 (1-2) servings

 

INGREDIENTS

1 cup rolled oats (or gluten free rolled oats)

1 cup almond milk

1 tablespoon ground flax seeds or chia seeds

1 tablespoon agave

0.50 cup blueberries

0.50 teaspoon cinnamon

0.50 teaspoon nutmeg

0.50 teaspoon vanilla extract

1/8 cup walnuts or pecans chopped (optional)

 

INSTRUCTIONS

  1. In mason jar add rolled oats, almond milk, nuts, ground flax seeds, agave, cinnamon, and nutmeg. Stir all ingredients.
  2. Add blueberries. Cover and place in fridge overnight or for at least 4 hours. Shake jar before pouring into to bowl.
  3. Add additional milk if needed and garnish with blueberries and cinnamon.

Sweet Potato Banana Mash

Course Breakfast, Snacks

Prep Time   5 minutes

Cook Time  8 minutes

Servings     1

INGREDIENTS

1 large cooked sweet potato

1 ripe banana

1 dash of cinnamon

INSTRUCTIONS

  1. Use potato express bag to heat potato in microwave for 4 to 8 minutes or Pre-heat oven to 400 degrees.
  2. Stab your sweet potato with a fork a few times, place on baking sheet, and put it in your pre-heated oven for around 40-45 minutes.
  3. Slice open sweet potato and mash in your ripe banana. Mix the sweet potato and banana until well combined.
  4. Sprinkle cinnamon on top.

Apple Peanut Butter Cups

Course Breakfast, Snacks

Cuisine American

Prep Time  5 minutes

Servings   1

 

INGREDIENTS

1 apple sliced

3-4 tsp peanut or almond butter

1 tbsp carob chips

 

INSTRUCTIONS

  1. Place sliced apples on a small plate.
  2. Drizzle almond or peanut butter over the apples.
  3. Sprinkle carob chips over apples.
  4. Enjoy every bite and smile!
