#SaturdaySnackdown featuring “Rocky Road Surprise” Vegan dessert whipped up by Erin Riley-Carrasco, PETA (People for the Ethical Treatment of Animals)‘s Sexiest Vegan Over 50! It’s a quick and delicious vegan dessert EVERYONE will enjoy!
Rocky Road Surprise
– 24 ounces dark vegan baking/melting chocolate
– 1 cup Spanish Peanuts
– 1 cup peanut butter
– 1 cup Vegan Marshmallows (pictured are from Trader Joes)
Melt the dark vegan cooking chocolate in a pan. Once the chocolate is melted, add the cup of peanut butter and stir in for approximately 3 minutes. Mix in the spanish peanuts and then add in the vegan marshmallows at the very end.Turn off the stovetop soon after you add in the vegan marshmallows. You don’t want them to melt.
 
Poor the ingredients into a 13 X 9 glass pan with wax paper on the bottom, spreading it out with a big spoon. Put into the refrigerator for apprx 15 minutes. It will become hard very quickly. It comes out, it will be like a big candy bar. Take a sharp knife and cute into pieces. ENJOY!
