Succulent Skillet Stuffed Peppers
Ingredients
2 bell peppers cored and sliced (red, orange or yellow work best due to their sweetness)
I sliced sweet onion
1 diced tomato
1-1.5 cups of vegan ground beef
1 tablespoon of turmeric
1/2-1 teaspoon of salt
1/2-1 cup of vegan shredded cheese
Pre-heat a skillet on medium-high heat
Brown one sweet onion in a tablespoon of vegan butter for 2-3 minutes
Add 2 sliced bell peppers and 2/3 cup of water (more can be added if needed during cooking)
Cover for 3-5 minutes or until vegetables are tender
Add diced tomato, turmeric and vegan ground beef and cook uncovered for an additional 3-4 minutes, adding the cheese to melt in the last minute.
