Buy Masa (doughy corn meal) at any latin themed market. You can also order it online.

Flatten into small, thick pancakes, the size of your palm.

Fry on both sides in pan with small amount of oil.

When browned on either side, place in oven set at 400 for 45 minutes.

Stuffing Recipe

In a bowl, add one sliced tomato

Add one diced onion

Add 3 sliced avocados

Salt and pepper and crushed red chili to taste.

Using a masher, combine all ingredients until creamy, like a guacamole.

Heat black beans in a pot and add to guacamole mixture. Stir.

Combining

Take browned and baked Arepa and slice it open three quarters of the way, like a pita pocket.

Place the guacamole mole/black bean combination into the pocket.

Eat and rave! It’s that good!

  • Veganism is something I`ve been looking more into lately. I`m sure that this is the only sustainable diet of the future but I`m just not ready to make the commitment yet. So, I`m trying to eat as ethically as possible by eating organically, not perfect but baby steps. I`m trying to cut back on my meat intake aswell. I`m sure at some point I`ll become a vegan but I`m also sure this is going to be a long process.
