RECIPE: Sumptuous Garlicky Sweet Potato Mash for a ThanksLIVING Side Dish.
Serves 6 – 8
- 8 c diced sweet potatoes (Peeled or unpeeled)
- 6 T vegan butter
- 2 garlic cloves, minced
- 2 T nutritional yeast
- 1 tsp dill
- 1/2 tsp nutmeg
- 1/2 tsp sea salt
- Ground pepper to taste
- 1/3 c pecans toasted and chopped (optional)
- Boil large pot of water and add sweet potatoes. Cook until tender (approx 10 minutes)
- Drain sweet potatoes and add back to the pot
- Add remaining ingredients (except pecans) and mash with potato masher until smooth.
- Top with pecans and serve!
