RECIPE: BadAss Vegan aka John Lewis’ Bad Ass Beautiful Mess
INGREDIENTS
- quinoa (4-6 servings) (prepare according to package directions)
- sweet plantains
- 1 onion, diced (can be used as a garnish or sauteéd)
- 10 oz guacamole, prepared or homemade
- 1 jalapeño, diced
- 1 garlic clove, crushed
- sea salt, to taste
DIRECTIONS
- Cook quinoa on the stove according to package directions
- Place sweet plantains, unpeeled, in a 350 degree F oven for 30 min or until tender
- Place guacamole, jalapeño and garlic in a blender using the low setting.
HOW TO PLATE
- Place the quinoa in a bowl, pressing the center down with a spoon.
- Place guacamole into the center of the quinoa
- Cut the plantain peel and scoop out the plantains, carefully placing them around the guacamole
- Garnish with raw, diced onions and enjoy
- Sweet Ripe Plantains (raw)
- Sweet Ripe Plantains (baked)
