RECIPE: Dr Reese Halter’s Sensational Summer Salad with Red Lentils, Herbs and Seeds

INGREDIENTS

  • 1 medium red apple, diced (with skin on)
  • 1 celery stalk, chopped
  • fresh ginger, 1 inch, finely chopped (with skin)
  • 1/2 jalapeño, chopped
  • fresh turmeric, 1 inch, finely chopped (with skin)
  • 1 green onion, chopped (include both white and green part)
  • 4 oz organic, fresh arugula, chopped
  • 3 oz organic, fresh basil, chopped
  • 2 oz organic, fresh cilantro, chopped
  • 2 oz organic, fresh mint, chopped
  • 1 organic cucumber, sliced and halved
  • 6 – 8 organic French green beans
  • 4 – 5 organic cherry tomatoes
  • 1 c organic red lentils (steamed for 5 min and drained)
  • 3 organic red radishes, finely chopped
  • 1 organic purple carrot, chopped
  • 1 Tbsp chia seeds
  • 1 Tbsp hemp seeds
  • 1 Tbsp sesame seeds
  • 1 Tbsp ground flax seeds
  • 1 Tbsp pumpkin seeds
  • 3 Brazil nuts, finely diced

DIRECTIONS

Dressing:

  • organic lemon, freshly squeezed
  • organic extra virgin olive oil, a drizzle
  1. Place into a beautiful (preferably clear glass bowl and gently toss)
  2. Enjoy
