RECIPE: Youth Empowered Action (Yea) Camp Lunch

Vegan Deli-Style Sandwich (serves one)

INGREDIENTS

  • whole grain bread
  • 1 Tbsp vegan mayo (Hampton Creek “Just Mayo”
  • 1 slice vegan cheese (Violife “just like Provolone with hot peppers”)
  • 2 green lettuce leaves
  • 4 – 5 organic cucumber slices (thinly sliced)
  • 2 tomato slices (thinly sliced)

DIRECTIONS

  1. Assemble the sandwich with ingredients above as desired

Additional side dishes:

  • steamed and cubed sweet potatoes
  • fruit salad (using cut up colorful fresh fruit, as available)
  • green salad with chopped broccoli, yellow peppers and tomatoes
  • hummus
