RECIPE: Spectacular Soy Chorizo Tacos

INGREDIENTS

  • 8 oz soy chorizo (we used El Burrito)
  • 2 – 3 garlic cloves, pressed and minced
  • 1/2 medium red onion, diced
  • 4 – 5 crimini mushrooms, sliced
  • 1 tbsp vegetable oil
  • 1 golden potato, steamed until almost done and cubed
  • 4 organic spouted corn tortillas (we used Food or Life)
  • 4 tbsp kimchi (we used Firefly Kitchens)
  • 1/4 c vegan cheese (we used Follow Your Heart Vegan Gourmet Shreds)
  • 1 tsp hot sauce (we used Yellowbird Sauce Jalapeño Condiment

DIRECTIONS

  1. Sauce red onions with garlic till soft
  2. Add mushrooms and continue sautéing until tender
  3. Remove sauce and set aside
  4. Then sauté soy chorizo and add the potato, cooking together until potato is fork tender
  5. Remove from heat and set aside
  6. Heat tortillas directly on the flame until softened
  7. Assemble placing the soy chorizo/potato mix on the tortilla
  8. Next layer with the mushrooms, onions and garlic
  9. Add a small handful of the shredded cheese
  10. Top with a tbsp of kimchi on top
  11. Finally add hot sauce as desired and enjoy!
