Main Course Salad with Avocado Toast

Mandarin Orange and Wild Greens Salad  Serves 4

INGREDIENTS

Salad

  • 1 bag of organic baby spinach

  • 1 bag of organic spring mix greens (or greens of your choice)

  • 1/2 cup or so of cherry tomatoes

  • 1 avocado

  • 1 half of red bell pepper, chopped (optional)

  • 1 half of green bell pepper, chopped (optional)

  • 1/4 – 1/2 cup of organic thompson raisins

  • 1/8 – 1/4 cup of sunflower seeds and pumpkins seeds

  • 1 – 2 cans of mandarin oranges (or fresh cut citronellas or tangerines)

  • 3/4 cup of candied pecans

  • 4 Tbs of nutritional yeast

  • 2Tbs of veggie bacon bits

Dressing: 

  • 2 Tbs of olive oil

  • 2 Tbs of Braggs Amino Acids

  • Optional 1Tbs of coconut amino acid

  • 1 -2 Tbs apple cider vineger

DIRECTIONS

  1. Combine baby spinach with spring greens into a large salad bowl

  2. Add chopped red and green bell peppers and chopped tomatoes

  3. Sprinkle with Thompsons raisins, sunflower seeds & pumpkin seeds

  4. Top with mandarin oranges with some of the juice and candied pecans

  5. Finish with chopped avocados, veggie bacon bits and nutritional yeast

  6. Mix dressing ingredients into a small bowl and pour over the salad

  7. Add extra Braggs and/or apple cider vinegar to taste
