RECIPE: Savory Puff Pastry Crown with Tomato Salad

Serves 6 to 8
INGREDIENTS for the crown:

  • 1 puff pastry sheet cut round and rolled 1/8” thin.
  • ¼ cup organic Earth Balance spread, softened and mixed with 2 drops of vegan imitation butter flavor. Brush over the puff pastry before arranging the other ingredients and brush on top of the finished crown.
  • 10 or more roasted cherry tomato halves (see recipe below)
  • ½ cup olives, pitted Kalamata olives mixed with canned black olives, drained and chopped
  • ½ cup sliced Miyoko mozzarella or shredded Follow your Heart mozzarella
  • ¼ cup Follow your Heart Parmesan cheese (if using Follow your Heart mozzarella add ¼ cup Daya mozzarella shreds)
  • 3 Tablespoons pesto to brush on top after taking the crown out of the oven (see recipe below)


  1. After assembly chill for 20 minutes.
  2. Cook in hot oven 400 F for 20 to 25 minutes.

INGREDIENTS for Tomato Salad in the center of the crown:

  • 1 cup cherry tomatoes, halved
  • 1/8 teaspoon salt or to taste
  • ¼ to ½ teaspoon dried oregano
  • 3 Tablespoons extra virgin olive oil

INGREDIENTS for the Pesto Sauce

  • 1 big garlic clove
  • 3 T pine nuts
  • ¼ C olive oil
  • 2 T water
  • ¼ t salt or to taste

DIRECTIONS for Pesto Sauce

  1. Blend until very creamy, then add
  2. 1 packed cup of basil leaves
  3. Pulse to combine and use immediately.

INGREDIENTS for Roasted Cherry Tomatoes

  • 1 pint cherry tomatoes, halved
  • 1 teaspoon fresh thyme leaves
  • 1 T olive oil
  • Kosher salt and freshly ground black pepper, to taste

DIRECTIONS for Roasted Cherry Tomatoes

  1. Preheat oven to 450 degrees F
  2. Toss cherry tomatoes with thyme and oil on a rimmed baking sheet
  3. Season with salt and pepper
  4. Roast, tossing once, until tomatoes are blistered & beginning to burst ~ 20 – 25 min
