BBQ Ranch Tofu Salad & Wrap
one tub of firm or extra firm tofu, pressed and cut in cubes
corn off the cob or from a can
cherry tomatoes sliced in half
vegan ranch dressing (follow your heart)
corn tortillas (for corn strip chips)
one wheat tortilla (for wrap)
ground black pepper
1/3 cup Tamari
3 tbs maple syrup (or more to taste)
1/4 tsp liquid smoke
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tablespoon smoked paprika
whisk together, put tofu cubes in bowl and pour marinade over. mix well. put in fridge for a few hours or overnight, mixing occasionally.
slice a few corn tortillas into strips and bake in the oven at 350 for about 20 minutes. keep an eye on them. you want them nice and crisp like a chip.
once marinated, cook in air fryer for about 20 minutes at 395 (more for firmer/crisper tofu). If you don’t have an air fryer you can bake them in the oven.
combine lettuce, corn, beans, cherry tomatoes, and sprinkle the crisp corn chips on top.
add cooked BBQ tofu
add vegan ranch dressing. mix and enjoy.
For the wrap add all the ingredients of the salad, except the corn chips (or add those too if you want.) Don’t forget the ranch dressing!
